Title: Green beer and Irish music
Post by: Wrightwood on Mar 14, 06, 06:31:22 AM
Sounds like the Yodeler might be a great place to visit this Friday evening for St Patrick's Day. Starts at 6pm

John Burcher and Friends will play live music including Irish songs.

Corn beef and cabbage with desert is the special for the night!

If you can't make that one the Wrightwood Inn is having "complimentary cornbeef & cabbage" on Sunday doors open at 2 pm. Purchase a drink or two, eat some great food, listen or sing some Irish Tunes.

Okay, I have never had corned beef, which is surprising considering my mom is 1/2 Irish. What would you liken the taste to?

I would say that's not a bad description - very tender when cooked properly. My favorite recipe consists of a tomato based Irish whiskey sauce that's so yummy.

Corned Beef with Irish Whiskey Sauce
==================================

1 or 2 Corned Beef Brisket
1       turnip
1       rutabaga
4       carrots
1       parsnip
2T     Pickling spice - (don't skimp as this adds lots of flavor)
usually included in brisket package (make sure that you have
at least 6-8 peppercorns and 2 bay leaves and supplement if
necessary) Tie spices up in a small pouch of double layered
         cheese cloth.
1/2c   Irish whiskey

Clean and cut vegetables in half, place in a large enough pot to cover all ingredients with a few inches of liquid. Add brisket, water and 1/2 cup Irish whiskey and spices. Bring to boil, cover and reduce to simmer for at least 2 1/4 hrs.

Irish Whiskey Sauce
==================
8oz    tomato sauce
1/2t   dry mustard
1/2c   brown sugar (firmly packed)
1/2c   Irish whiskey

Simmer ingredients for 20 minutes (I usually make a double batch as this sauce is so good)

Remove cooked brisket and drain well. Place in small roasting dish, cover with 1/2 of the Irish Whiskey

Sauce and place in 350deg over for 20 minutes.

Bring balance of liquid and vegetables back up to a rapid boil.
Quarter 1 head of cabbage and place in boiling liquid and cook until tender approximately 20 minutes.

Remove brisket from oven and cut cross grain with sharp knife. Balance of sauce can be served on the side.

In a pinch you can substitute Wild Turkey in place Irish Whiskey.

That sounds absolutely outstanding!

What brand of Irish Whiskey do you normally use?  Bushmills...?  My mother in law is from Ireland and I would love to make this for her!

Bushmills has been our choice. (http://www.classicwhiskey.com/whiskey/images/whitebush.gif)

The smell is incredible while this is cooking as the whiskey, spices and veggies are such a great combination.
You can also throw some new potatoes in the pot if you'd like. (add those in with about 10 minutes before brisket is finshed and cook along with cabbage)

I'm hard pressed to tell you my favorite - eating the corned beef meal plated up or baking a fresh loaf of homemade dark pumpernickel rye bread - then building sandwiches with the corned beef, sauce, straight horseradish and slices of homemade kosher dill pickles. Now you've got me really hungry!

BTW... Bonnie's corned beef meal last night at the Yodeler was excellent!

You started it!  ;D  And why'd you have to go and mention the fresh baked bread!

Glad to here the Yodeler's meal and drink was a hit!

Our friends next door (Snowball on here) gave us a late invitation to come over for her Corned Beef dinner.  She did it in the crock-pot and it was awesome!  Thanks again Snowball!
